Item Categories
Item categories are very important for reporting and for configure to order production item default. You can use one category for all your items but then when you want to report on your items, you will only be able to report across one category. As you can see above, there are a few categories setup that many items belong to. Should you want to report on your raw materials only, you will be able to do so because you have assigned all your raw materials to the raw materials category.
The defaults set on the category do not override or get assigned to the item when you create the item and link it to the category. These defaults are used in the configure to order process. When a configure to order item is created on a sales order and is linked to a category that is Configure to Order Enabled, it will be created on the fly with the defaults set on the category.
